Sencha is the most popular tea in Japan, accounting for almost 80% of the tea consumed. Usually top parts of the tea leaf and buds are used. It is grown in full sunlight and is processed in multiple stages - sifting, cutting, roasting and often blending. Sencha is noted for its delicate sweetness, mild astringency and flowery-green aroma. The quality of Sencha will vary depending on origin, time of harvest and leaf processing techniques. This Sencha, while not as high a quality as our Premium Organic Sencha, is a good introduction to Japanese-Style Green Teas. The flavor is typical of most Japanese Senchas, yet not quite as "grassy." Use 2 teaspoons per 16 to 24 oz pot. Hint: Increase water temperature higher to enjoy an earthy aroma and more astringincy, while a lower temp will produce an sweeter, fuller-bodied cup.
